Easy Egg Scramble

Plain scrambled eggs are one of my favorite breakfast foods, but sometimes I want a little more savory flavor. Here’s an easy way to transform this breakfast staple into a delicious, nutrient-packed dish. Choose some of your favorite vegetables and spices and create your own variation. In this recipe, I only used spinach and chopped onion, but there are so many healthy ingredients to add to personalize your meal. You could also add meats and/or cheese. Depending on the portion size you want, you can add or subtract the amount of eggs and egg whites. Leave a comment with which variations you try!



Easy Egg Scramble

  1. 2 eggs
  2. 6 tablespoons liquid egg whites
  3. Choice of vegetables (ex. spinach, chopped tomato, diced onion, mushrooms, chopped peppers, asparagus, etc.)
  4. Pinch of salt
  5. Pepper
  6. Garlic powder
  7. Optional: choice of meat (ex. chicken, low calorie chicken sausage, turkey bacon, etc.)
  8. Optional: reduced fat mozzarella cheese
  1. Spray a pan with non-stick cooking spray. Put on medium-low heat.
  2. Crack the eggs into a bowl and mix with the egg whites. Add seasoning and mix well.
  3. Pour egg mixture into the pan. Let cook for a minute or so.
  4. Add remaining ingredients. Move the mixture around in the pan to evenly distribute the ingredients.
  5. As the eggs start to become more firm, continue to move the mixture around in the pan, making sure that it's not too wet. This will ensure that it's cooked all the way through.
  6. Once it's completely cooked, serve and enjoy!
