Apple “Doughnut” Rings 3 Ways

These Apple “Doughnut” Rings were featured in my September ’18 episode of my Bri Healthy talk show! They’re simple, delicious, gluten-free, low calorie, and a perfect, healthy dessert for fall. Watch the video to see me demonstrate the easy recipe in 3 different flavors!

Apple "Doughnut" Rings 3 Ways

Ingredients
  1. 1 apple, sliced horizontally about ¼ inch thick
  2. 1 cup plain nonfat Greek yogurt
  3. 1 tablespoon pure maple syrup
For the toppings
  1. Low-sugar granola
  2. Cinnamon
  3. Dark chocolate chips (I used Lily's Chocolate Chips, sweetened with stevia)
  4. 1 teaspoon powdered peanut butter
  5. Rainbow sprinkles (preferably with natural dyes)
Instructions
  1. Slice apples from top to bottom into ¼ inch thick slices.
  2. Using a paring knife, carefully cut a circle around the core on each slice to form the "doughnut" holes.
  3. In a large mixing bowl, add the Greek yogurt and pure maple syrup and mix well.
  4. Take 3 smaller mixing bowls if you're making all 3 flavors.
For the Cinnamon Granola flavor
  1. Add Greek yogurt to a small mixing bowl and add cinnamon. Mix well.
  2. Spread a spoonful of the Greek yogurt mixture onto an apple slice. Spread until evenly frosted.
  3. Top with low-sugar granola. Enjoy!
For the Peanut Butter Chocolate Chip flavor
  1. Add Greek yogurt to a small mixing bowl and add 1 teaspoon of powdered peanut butter. Mix well.
  2. Spread a spoonful of the Greek yogurt mixture onto an apple slice. Spread until evenly frosted.
  3. Top with dark chocolate chips. Enjoy!
For the Rainbow Sprinkles flavor
  1. Add Greek yogurt to a small mixing bowl and add rainbow sprinkles. Mix well.
  2. Spread a spoonful of the Greek yogurt mixture onto an apple slice. Spread until evenly frosted.
  3. Top with more rainbow sprinkles. Enjoy!
