Roasted Eggplant Mozzarella Melt

This recipe is unbelievable. I’m kind of speechless at how incredibly delicious it is and that it is low calorie and healthy at the same time. The melted cheese is so stringy and satisfying, while the hearty Italian flavors of the tomato sauce and roasted eggplant complement each other perfectly. This is honestly a must-try. It’s simple to make and as usual, it’s fantastic! Make this for dinner for yourself, as this recipe is one complete dinner portion for one. You could also make it as an appetizer for your dinner guests, or double/triple it as needed for a main course for multiple people! It plates beautifully as well. Make this as soon as possible, you won’t regret it!

Makes 1 serving

Helpful Hint: It makes it easier if you roast the eggplant in advance to allow the oven time to cool down between roasting and baking. If you don’t have enough time to do so, it’s okay, but it’ll make it easier for you if you do!

Ingredients

  • 1 large eggplant, sliced into circles
  • 1 tbsp extra virgin olive oil
  • ¾ cup no sugar added tomato sauce (I used Monte Bene)
  • ⅜ cup part-skim or reduced fat shredded mozzarella cheese
  • Pinch of salt
  • Pinch of black pepper
  • Optional: basil

Instructions

  1. Preheat oven to roast at 425ºF.
  2. Slice eggplant into round slices.
  3. Place eggplant in bowl and drizzle olive oil over it. Toss and try to coat the eggplant with the oil. If it’s not entirely coated, that’s okay.
  4. Line a baking sheet with tin foil and place the eggplant on the sheet. Season with salt and black pepper.Screen Shot 2015-12-13 at 4.07.25 PM
  5. Roast for about 18-20 minutes, or until fork-tender.Screen Shot 2015-12-13 at 4.07.58 PM
  6. Set oven to bake at 350ºF. (It’s helpful to roast the eggplant in advance to eliminate waiting time to reduce oven temperature.)
  7. Place the roasted eggplant layered over each other in a square baking pan (with raised sides).
  8. Place the tomato sauce evenly over the eggplant.
  9. Sprinkle the cheese evenly over the pan’s contents. If desired, sprinkle some fresh or freeze-dried basil on top as well.Screen Shot 2015-12-13 at 4.08.38 PM
  10. Bake for about 8-10 minutes, or until cheese is melted and begins to lightly brown.
  11. Enjoy!
