These Apple “Doughnut” Rings were featured in my September ’18 episode of my Bri Healthy talk show! They’re simple, delicious, gluten-free, low calorie, and a perfect, healthy dessert for fall. Watch the video to see me demonstrate the easy recipe in 3 different flavors!
- 1 apple, sliced horizontally about ¼ inch thick
- 1 cup plain nonfat Greek yogurt
- 1 tablespoon pure maple syrup
- Low-sugar granola
- Cinnamon
- Dark chocolate chips (I used Lily's Chocolate Chips, sweetened with stevia)
- 1 teaspoon powdered peanut butter
- Rainbow sprinkles (preferably with natural dyes)
- Slice apples from top to bottom into ¼ inch thick slices.
- Using a paring knife, carefully cut a circle around the core on each slice to form the "doughnut" holes.
- In a large mixing bowl, add the Greek yogurt and pure maple syrup and mix well.
- Take 3 smaller mixing bowls if you're making all 3 flavors.
- Add Greek yogurt to a small mixing bowl and add cinnamon. Mix well.
- Spread a spoonful of the Greek yogurt mixture onto an apple slice. Spread until evenly frosted.
- Top with low-sugar granola. Enjoy!

- Top with dark chocolate chips. Enjoy!

- Top with more rainbow sprinkles. Enjoy!
