Colorful Cucumber Salad

Ingredients

  • 1 cucumber, diced
  • 1 medium red onion, diced
  • 1 tomato, diced
  • 1 can chickpeas, drained and rinsed
  • 2 scallions, chopped
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Pink Himalayan salt
  • Black pepper
  • Garlic powder

Instructions

  1. Mix all ingredients together in a large bowl. Enjoy!
