- 1 cucumber, diced
- 1 medium red onion, diced
- 1 tomato, diced
- 1 can chickpeas, drained and rinsed
- 2 scallions, chopped
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra virgin olive oil
- Pink Himalayan salt
- Black pepper
- Garlic powder
- Mix all ingredients together in a large bowl. Enjoy!
