Colorful Rainbow Salad

  • Leafy greens
  • Tomatoes, diced
  • Orange beets, diced
  • Yellow carrots, sliced
  • Fresh or dried blueberries
  • Red onion, diced
  • Purple carrots, sliced
  • Freshly squeezed lemon juice for dressing


  • Add all ingredients to a large salad bowl or serving dish. Squeeze lemon juice on top. Enjoy!
